2 ounces Martin Miller’s Westbourne Strength gin
1 white sugar cube
4–5 dashes Peychaud’s bitters
Pinch of tarragon
2 Luxardo Marasche cherries
1 barspoon Banyuls vinegar mixture* (recipe follows)
Orange twist, flamed
*Banyuls vinegar mixture: equal parts white pepper, juniper berries and coriander seeds toasted in a pan for 10 minutes then soaked with Banyuls vinegar. (Mixture stays fresh only a few days.)
Muddle all ingredients in glass shaker, stir with cracked ice, strain into old-fashioned cup with chunk of ice. Garnish with flamed orange twist.
